Mum's Classic Tomato Chutney!

If you still have fresh tomatoes leftover from the summer harvest or are looking for a quick side dish or chutney for your meal, Mum's Classic Tomato Chutney is the way to go! This cooked chutney is tangy, bright, salty, spicy with just a hint of sweetness. It really is the best and comes together really quickly. You can serve this for any curry night really or make this for a guest or just have it as a chutney at snack time! I personally love to eat this with dhal and rice. So simple but so satisfying. Yum!


This recipe is very easy and quick. I have written it for fresh tomatoes but you can use a can of diced tomatoes too. My suggestion would be to use fresh tomatoes that are picked in season as those will have the best taste. See full recipe below for the details. RECIPE: Serves 4 Prep time: 10 minutes Cook time: 30 minutes Ingredients: - 4 medium Roma tomatoes / 1 can diced tomatoes -1/4 cup olive oil -1 tsp mustard seeds -1 tsp cumin seeds -handful of curry leaves (optional) -1/2 cup sliced onions -1 tbsp crushed garlic -1 tbsp crushed ginger -1 tsp crushed Thai chilis (optional)

-1/2 cup water

-1 tsp sugar

-salt to taste

-handful of chopped cilantro (optional)


Method:

  1. Wash and dice tomatoes.

  2. Heat up oil on medium flame. Add mustard seeds, cumin seeds and curry leaves if using. Once sputtering occurs, add half of the sliced onions. When edges are brown add garlic, ginger and chilis if using. Stir for 1-2 minutes.

  3. Add diced tomatoes, water and salt to taste. Mix well. Cover.

  4. Once half the water is almost cooked off, add the rest of the sliced onions and mix well.

  5. Add sugar and adjust seasonings.

  6. Garnish with chopped cilantro.

  7. Serve as a condiment to any vegetarian or meat or seafood dishes or it can be used as a chutney for snacks too!
