Mum's Easy Asian-style Chicken


Today's recipe is very simple, easy and delicious, Mum's Easy Asian-style Chicken! Aside from the delicious Indian food Mum makes, she makes creative dishes from other cuisines too! This Asian-inspired dish results in a saucy, garlicky, moist and flavorful chicken that will have you asking for seconds! This recipe is a cinch to put together and you probably have all the ingredients at home already. So read on!


You will need some chicken pieces. We like to buy a whole frozen chicken and chop it into curry pieces (2x2x2 inches) mostly for making chicken curries and chicken pulaos. You can use whichever type of chicken you may have on hand. Just will have to adjust cooking times a bit. Then it is just a matter of cooking up the chicken with onions, garlic, ginger, soy sauce and some water. The water will help to make a light gravy. Once chicken is cooked, add some more onions for some added texture and chopped cilantro for garnish. And there you have it! Mum's Easy Asian-style Chicken!

Serve over rice and/or with freshly made rotis or even pooris! This dish can be served as a main course with some great veggie side dishes or even as an appetizer! Extremely tasty and versatile! Let me know what you think in the comments section below!

RECIPE:

Prep time 10-30 minutes

Cook time 30 minutes

Serves 4

Ingredients:

*1 whole frozen chicken (2x2x2 inch pieces)

2 tbsp extra virgin olive oil

1 cup diced onions

2 tbsp crushed garlic

2 tbsp crushed ginger

1 tbsp crushed Thai chili (optional)

Salt to taste

1/4 cup soy sauce (low sodium)

1/2 cup water

Handful of chopped cilantro

Method:

  1. Thaw chicken. *Chop into smaller pieces (2x2x2 inch pieces). Wash and drain.

  2. On medium heat, heat oil. Add 1/2 cup diced onions, garlic and ginger. Fry for 1-2 minutes until aromatic or garlic starts to brown a bit.

  3. Add chicken pieces and salt. Mix well.

  4. Cover and let cook until released liquids cooks off.

  5. Add soy sauce and water.

  6. Cook until most of the water has cooked off. Allow some browning to occur.

  7. Stir in remaining 1/2 cup of diced onions and cilantro.

  8. Serve warm. Enjoy!

Notes:

*We like to cook with bone-in chicken but you can use boneless chicken breasts or thighs for this recipe too. Or any other kind of chicken. Cooking times will be slightly different but results should still be delicious!
