Mum's Classic Nimkis

Today's recipe is for Nimkis, another famous and beloved Diwali snack. We make this every year for Diwali. Much like lakdi mithai, I don’t think it will be Diwali in our family without Mum's Classic Nimkis. Nimkis are diamond shaped pieces of savory dough that are deep fried. They are salty, savory, crunchy and slightly spicy. Very hard to eat just one. But Diwali calories don't count in my opinion so munch away! You also don't have to wait for Diwali to make these. So yummy!

This recipe is pretty straightforward and easy. First you have to make a dough. The AP flour plus corn flour has to be mixed with vegetable oil and oil rubbed in. Then salt, turmeric, cumin, carom seeds, garlic powder and chili powder are mixed in. Then cold water is add and used to knead out a firm dough.

Once dough is made, little balls of dough are rolled out into a circle. Then strips are cut out of this rolled out dough and the strips are cut into a diamond shape.

The diamonds are then fried on medium heat in vegetable oil. Once they are all fried until golden brown, they are ready to eat! It is that simple!

This recipe makes a big batch that can be munched on before, through and after Diwali. We also make big batches of sweets/ snacks for sharing with loved ones. Sharing food is a big part of Diwali.

RECIPE

Serves 6

Prep time 10 minutes

Assembly time 30-60 minutes

Fry time 30 minutes


Ingredients

-4 cups of AP flour plus extra for dusting

-4 tbsp of corn flour

-4 tbsp vegetable oil

-1 1/2 tsp of cumin seeds

-1 tsp carom seeds

-1/4 tsp turmeric

-1/2 tsp garlic powder

-1/2 tsp Kashmiri chili powder

-1 tsp salt

-1 1/2 cup cold water

-vegetable oil for frying


Method

  1. Mix AP flour and corn flour.

  2. Add vegetable oil and rub into the flour mix. Add rest of the spices and salt.

  3. Add water.

  4. Knead into a firm dough.

  5. Form smaller balls and roll out into a circle. Cut each circle into 1 inch strips. Take each strip and cut into a diamond shape.

  6. Fry in batches in vegetable oil over medium heat.

  7. Fry until golden brown and crispy.

  8. Nimkis can be eaten right away or stored in an airtight container for several weeks at room temperature.
